Our Mission
Parikshit (Monti) Issar holds a postgraduate degree in Applied Arts from Panjab University, Chandigarh, and studied Animation and Visual Effects in Auckland, New Zealand. He has worked on major advertising campaigns and contributed to post-production on films including The Lord of the Rings and King Kong.
A born innovator, Monti saw the gap that inspired everything that followed: Indian cuisine — loved the world over — had no global QSR brand to call its own. The Butter Chicken Shop is his answer: a brand built to bring the world's most advanced cooking technology to Indian food, delivered with international food-safety standards and world-class consistency.
He believes in relentless innovation — pushing boundaries, treating failure as part of growth, and challenging convention, because the breakthrough that defines today can be obsolete tomorrow. That restlessness is baked into the brand: the same taste, every store, every time — with no shortcuts.

Our Journey so far

2018ITHE CONCEPT IS BORN
Everyone told us Indian food couldn't be standardised. So we spent a year proving them wrong.
We set out to build the first of its kind: a chef-free Indian QSR, engineered for perfect consistency and put straight in front of real customers to taste. The early attempts failed, again and again — traditional Indian cooking simply wasn't built to be standardised.
So we stopped looking inward and studied the giants. We took apart how Nando's and KFC engineer flavour at scale, and rebuilt Indian cooking around that model.
That was the breakthrough. Not a recipe — a method.
2019ITHEFIRST STORE OPENS
We opened the first Butter Chicken Shop in Eden Rise Shopping Centre, Berwick — and we didn't hide from the competition. We set up directly opposite Nando's, KFC and Domino's.
It was an instant hit. Sales climbed week after week — proof the model worked in the real world, not just in testing.
Then COVID hit, and we had to pause. But the concept had already proven itself.




2020-21ITHE COVID PHASE
While much of hospitality shut down, we used the time to sharpen the model. We re-engineered our menus and methodology item by item, holding every dish to true QSR standards — speed, consistency, scalability.
Then we did what few could during a pandemic: we grew. Two new stores opened, in Camberwell and Eumemmerring.
We didn't just survive COVID. We came out of it faster, leaner and ready to scale.
2023-26ITHE R&D DEVELOPMENT PHASE
Post covid we pushed it further. We refined menus, tested new cooking technology and equipment, and kept engineering out every trace of chef dependency — chasing the same taste, every store, every time.
New suburbs and retail environments became our proving ground. We opened in Doveton, Bayswater, Moonee Ponds and Altona Meadows — each a different location, each held to the exact same standard. A system tested & refined over seven stores.and ready for the next chapter.



2026& BEYONDITAKING IT TO THE WORLD
Now we scale. We're looking to open further across Melbourne and taking the model to India — launching in Bengaluru ahead of a pan-India rollout.
We're bringing world-class cooking technology and Australian quality standards to a market of 1.5 billion — with the consistency, speed and quality that only a fully standardised system can deliver.
Indian food gave the world its most addictive dish. We're giving it the global brand it's been waiting for.

Now we're taking the model to India. Launching in Bengaluru ahead of a pan-India rollout, we're bringing world-class cooking tehnology and Australian Quality standards to a market of 1.5 billion — with the consistency, speed and quality that only a fully standardised system can deliver. — and our journey into India and the world is just beginning.
